The sprite from opponent's bikes seems to be a recolor from player's.

Since the front sprite features twin headlights (like the opponent's bike from the cover picture), I would say its a
1990 Kawasaki ZXR-750. It was also available with red paint job.

Bike front does not seem to be the Ducati on the cover picture since the ingame bike features twin headlamps, like opponents' bikes, as it's possible to see when crashing:
