Look at it this way: this game's version of San Francisco all happens inside John Tanner's mind, an absolute gearhead. In his mind, the only Nissans driving around are GTRs.

Only difference being that Eagle and Plymouth don't exist anymore, but Dodge still does, so it makes even less sense.
