It looks like they wanted the car to have the exhaust come out of the cylinders directly originally but Jaguar said no so they put these weird things that look like microphones instead. Considering where they are positioned on the hood, I think they are meant to be velocity stacks connected to the carburetors. Then they've put trumpets on top of them.
