My guess is a '66 Pontiac GTO, since that's the car which the Peyote's headlights were taken from (the hood shape and rear fender shape also match the Pontiac):

I believe this should be a '57 Thunderbird and not a '55, since the game calls it a "57 Deluxe".

This car bears a similar resemblance to the Peyote from Grand Theft Auto IV, so my bet is that it's kind of like a Ford Thunderbird.

The '66 Cadillac had stacked headlights, but the rest of the car doesn't have much similarity. It is pretty generic, but almost definitely early-mid '60s.
